This fast-casual concept was founded in New York City in 2010 by Dario Wolos, whose mother was originally from Monterrey, Mexico. Tacombi is a variation of a taco concept he first attempted in Mexico, serving out of a Volkswagen bus. Now, Tacombi is growing rapidly with help from a $27.5 million investment from restaurateur Danny Meyer's Enlightened Hospitality Ventures. The goal is to reach 75 units by 2026 using a managing partner operating model. The brand also has a consumer-packaged-goods component with tortillas, chips and frozen burritos available at retail under the Vista Hermosa brand.
