Emerging as one of the leaders in the competitive poke niche, Irvine, Calif.-based Pokeworks is investing in franchisee profitability as the brand prepares to move outside the U.S. for the first time, starting with openings in Canada. Japan-based restaurant holding company Toridoll Holdings invested in Pokeworks in 2018, then with the goal of bringing customizable poke, served in a bowl or burrito, across the U.S. The chain added a net of four units in 2022 for a total of 65 across 20 states.
