Most state reopening guidelines issued in May typically required restaurants to use disposable menus or permanent bills of fare that could be readily sanitized. Bonnie Berginski, who runs the Rockin’ Relics diner in Rugby, N.D., planned to print permanent menus that can be slipped underneath a clear plastic table covering. The covering can be cleaned after each use of the table, eliminating the need to wipe down the menu separately or discard it.
